Paolo enrolled in Global Academy, looking forward to the prospect of working with Michelin-star chefs after graduation. He wanted an international culinary career that would allow him to learn straight from the best in the industry. His education at Global Academy prepared him for that. In 2010, right after graduation, Paolo got the opportunity to work in the world-renowned Atlantis, The Palm, in Dubai, where he was awarded “Legend of the Month” twice in 2011. He went back home for a short stint in The Tasting Room, City of Dreams in Manila, but has since left again for the Armani Hotel, where he was also awarded “Ambassador of the Month” last March for his excellent work. There, Paulo is building his experience, one perfect dish at a time.
